7. LardLard is obtained by rendering the fatty tissue of the hog. It is difficult for me to discuss lard in a restrained manner, because I find it so disgusting. It is a product of the worst of the meat animals, and it is the worst of the cholesterol-abundant, saturated fats. Since it is an animal product, it is included in this discussion, though I can't believe any students of Natural Hygiene would ever consider its use. (Vegetarians who eat bean dishes in Mexican restaurants should be sure they weren't cooked in lard, since this is often the case).
